Raw Vegan Snowballs

Apropos, of today’s blizzard in Boston and beyond, I thought you might enjoy a snowball you can make indoors.  This recipe is the creation of OG intern, Jess, with a little inspiration from Ani Phyo’s Oatmeal Raisin Cookie Recipe.

You don’t need to be raw or a vegan (disclosure: I’m neither) to enjoy this raw vegan recipe.  Moreover, I don’t know about you, but after a holiday season of indulging, I’m extra keen on eating wholesome, simple foods with fewer ingredients.  The fact that this one doubles as a sweet treat is just the icing coconut flakes on the cake.

1 1/4 cup oats
1/2 cup dates (formed into date paste)*
1 1/2 tablespoon coconut oil (warmed to liquid form)
Dash salt
Dash vanilla extract (alcohol-free)
Coconut flakes (for rolling)

Optional add ins:

-Chocolate chips
-Gogi berries
-Peanut butter
-Nuts, seeds, berries

*To make date paste soak the dates in water to soften, 1 hour to overnight.  Then remove the dates from the water and de-pit them.  Blend in a food processor until a paste forms.


Blend oats in a food processor or high powered blender.  For a less smooth texture, do not fully process into a powder.  Add the dates and combine well.  Add the rest of the ingredients and blend in the food processor or mix by hand. If the mixture is too dry, add some of the water in which the dates soaked.  (I haven’t tried it, but I bet coconut water would be great, here, too).  Add in anything you like– chocolate chips, berries– anything goes!  Form into balls and roll in the coconut flakes.  Enjoy immediately or store in fridge or freezer.
