Stir Up Something Sweet: Chocolate Chia Seed Pudding

Enjoy this raw vegan recipe as dessert or even breakfast (shhh, we won’t tell). Packed with pure ingredients for energy and health, including chia seeds, an endurance food favored by the Tarahumara superathlete tribe in the popular book Born to Run, and coconut water (disclosure: from O.G. sponsor Vita Coco), you’ll love this tapioca-like pudding. The shredded coconut on top is optional, and it can be stirred into the pudding as well. Try your own variations, with added fruit, nuts, or a dollop of yogurt.  Instead of coconut water, you may also use rice or soy milk.

    Great recipe! I love chia seeds but I only use them in my smoothies. Gonna definitely try this.
